Ingredients

Scale
  • 3 cups almond flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 3 eggs, beaten
  • 1 tsp pumpkin pie spice
  • 1/2 cup honey
  • 1 cup ripe bananas (approx. 2 large)
  • 1 cup shredded zucchini
  • 1 cup pumpkin puree
  • 1 tablespoon coconut oil

Instructions

  1. preheat oven to 350 degrees and line 2 loaf pans with parchment paper
  2. mix dry ingredients in bowl
  3. add beaten eggs, banana, zucchini, honey and coconut oil
  4. mix until combined.
  5. bake for 30-35 min until toothpick comes out clean.
