Creamy butternut squash disguised in a good old fashioned cheese quesadilla for a veggie kick and a delicious twist…made in less than 10 min.
Butternut squash is on average…one of the sweetest vegetables i’d dare say. And therefore it should be the easiest to squeeze into anyone’s diet…whether it’s your picky husband who claims to “not like vegetables that much” to your child who refuses to eat anything that may resemble anything other than a white starch.
This recipe is one that will help you secretively slide in a little more vegetable into someones life. Or, you could call it a unique twist on the cheese quesadilla. Whatever your reasoning is…I think you will be pleasantly surprised with it’s ease and deliciousness.
This dish can be made to fit all types of diets….flour tortilla or corn [for gluten free], vegetarian or not [add chicken], dairy free [add vegan cheese OR leave out the cheese],….etc.
A few important steps which make this recipe VERY easy:
COOK the BUTTERNUT SQUASH in the OVEN
- Cook/bake/roast [whatever you want to call it] the butternut squash BEFORE cutting it.
- Preheat oven to 350 degrees, pierce the squash with a knife and place in oven. Bake for 45-50 min depending on the size. [it will ooze squash juice so be sure to put a pan or piece of aluminum foil on a rack BELOW the one the squash is on.]

PUREE SQUASH
- Scoop or cut the butternut squash and puree until smooth! It will mesh much easier with the melted cheese and the texture will be better than if the squash was cubed or even mashed.
ADDITIVES
- You can add anything you like to make this quesadilla your own!
- fresh basil
- bacon bits
- chicken
- spinach
- tomatoes
WATCH THE BROILING CAREFULLY!
- Don’t turn your eye away from the oven! It just takes a min for the open faced tortilla’s to burn.
- Once cheese is melted, tip the cheese corn tortilla on top of a squash/bacon bit/basil tortilla for your finished product!
Butternut Squash KIDS Quesadilla
These cheese quesadillas are loaded with butternut squash + fresh basil for a unique healthy twist that will help get those veggies into any kids diet.

Ingredients
- 1/2 butternut squash, mashed
- 1/2 cup shredded cheese
- 6 corn tortillas
- Fresh basil
- Bacon bits [optional]
Instructions
- Preheat oven to broil.
- Prepare jelly roll pan with parchment paper.
- Lay out all 6 tortillas spaced apart on pan.
- Spread pureed squash and bacon bits on 3 tortillas.
- Sprinkle generous amount of cheese on the remaining 3. Leave all open faced.
- Place in oven and broil until melted. Watch carefully, it only takes a few min. And it can burn quickly.
- Flip one cheese on top of one butternut squash.
