A perfect Thanksgiving salad with broccoli + shredded cabbage + dried cranberries + toasted pecans drizzled in sweet Apple Cider vinegar dressing.
Sometimes you need just a little twist on a that classic salad your aunt would bring for your Thanksgiving meal. You know, the one with broccoli, sliced nuts and that heavy dressing? This salad is just that. Only better. With a lighter twist with added sliced grapes and toasted pecans! Perfect for any thanksgiving meal.
I love a good salad. And love one with a crunch. My family is used to the spinach with chicken, spinach with mushrooms, spinach with apples…etc. Only spincah. And spinach all the time. Luckily, I subscribe to this service in New York called CSA Crop Share….(Community Supported Agriculture.) It is through Hearty Roots Farm.
Each week on wednsday, I stop by my pick up point…which happens to be Rutgers Church, and I collect my crop for the week! It has varying crops like sweet potatoes, japanese turnips, cabbage, concord grapes, onions, bok choy etc. So fun right??
Well, this one week, this one particular box included cabbage + concord grapes and onions. All of which I thought- surely I can do something with that!
And out came the healthy Cranberry Cabbage Salad with Chicken and Toasted Pecans
Including—
- Crisp cabbage
- Dried cranberries [I get mine from Costco and they are juicy and plump and Ocean Spray made]
- Toasted pecans/toasted almonds [they are easy to toast yourself…or buy some toasted!]
- Chopped chicken/turkey [already cooked of course]
- Chopped Red onion
- Sliced grapes
Dressing ingredients–
- Apple cider vinegar
- Mayonaise
- Greek Yogurt
- Dijon Mustard
- salt
Mix dressing ingredients together in a bowl…then set aside while you make the salad.
Toss all ingredients for the salad and add the desired amount of dressing! You can use toasted pecans or toasted almonds. I was thinking the pecans gave a nice festive fall touch. But as you can see by the picture above…I have also used almonds.

Ingredients
Dressing:
- 1/2 cup non fat greek yogurt
- 1/4 cup light mayonnaise
- 1/2 tsp Dijon Mustard
- 1/4 cup honey
- 2 Tablespoons apple cider vinegarĀ
- 1/2 Red onion, chopped
- 1/4–1/2 tsp salt
Cabbage salad
- 3 cups shredded cabbage
- 2 cups chopped broccoli
- 1/2 cup dried cranberries
- 1/2 cup sliced grapes
- 1 cup toasted pecans
- 1 cup chopped chicken/turkey, cooked
Instructions
Dressing:
Mix all ingredients together until smooth. Set aside.
Salad:
Mix all ingredients in a large bowl, drizzle with desired amount of dressing. Store in the fridge.
