15 min Dairy free Chocolate Pudding {made with Coconut milk}

Ingredients

Scale
  • 1/4 cup unsweetened cocoa powder 
  • 3 cups unsweetened coconut milk *
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 1/2 Tablespoon butter
  • 1 1/2 tsp vanilla

Instructions

  1.  Combine all dry ingredients in large saucepan (or large microwave bowl)
  2.  Add milk and bring to boil, stirring constantly to prevent lumps and clumps.
  3. Boil for 10 min or until the pudding is thick and coats the back of your spoon. (If using microwave, stop microwave every 2 min and stir x 10 min)
  4. Remove from heat and add butter and vanilla. 
  5. Strain if you believe you have lumps. (I always strain JUST in case)
  6. Enjoy warm or cold! (see notes)
  7. Remove from heat and

Notes

* Use the carton coconut milk…NOT the canned.

**You can also use Unsweetened Almondmilk or soy milk

If using cold and it appears as if it has become gelatinous…just whip it with hand mixer and it will become fluffy!
