This healthy gazpacho comes together in min and involves only the ingredient itself! No cooking needed! Tomatoes + cucumber + red bell pepper + garlic + onion + red wine vinegar + salt and pepper. It is the perfect cold soup for any day of the week.

Ingredients

2 lbs tomatoes [Heirloom or Roma] 1/2 white onion
1 red bell pepper
1 cucumber
2 garlic cloves
2 Tbl red wine vinegar
1 tsp salt
Pepper to taste
Instructions
Slice and deseed the tomatoes removing all the seeds and the mushy part. Leaving only the meat of the tomato. [doesn’t have to be perfect!]. Then place in a blender.
Add all other ingredients
blend well to desired consistency and enjoy!
Drizzle balsamic glaze and chop fresh basil on top.
