This gluten free Almond Orange cake is a fresh, dense cake suitable for any occasion. It’s sweetened with sugar, flavored with delectable sweet naval oranges and held together with Almond meal.

Ingredients

  • 2 large oranges
  • 6 eggs
  • 2 cups ground almonds (almond meal)
  • 1 1/2 cups sugar
  • 1 teaspoon baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. Wash oranges and place in saucepan. Peel and all! Cover with water until oranges are submerged. Bring to boil and then reduce to medium heat. Simmer for 2 hours. Drain the pot and let the oranges cool.
  3. Once cool, cut in half and remove the stalk and seeds. Cut into chunks and place orange chunks in the blender. (including the rind!) Puree completely. Set aside.
  4. In separate bowl, whisk eggs and sugar until combined
  5. Add orange puree and vanilla
  6. Mix in almond meal and baking powder
  7. Grease 10 in springform pan, pour in batter
  8. Bake for approx 1 hour 10 min. Check doneness with toothpick. Should come out clean with little to no crumbs.
  9. Serve with powdered sugar on top, fresh fruit and a dollop of Honey yogurt.
  10. Serve with friends!
