Hasselback Sweet Potato Greek Salad with Edamame

This easy vegetarian salad combines edamame + tomatoes + and olives topped with a hasselback sweet potato!

Sweet potatoes, the secret star of the show that is often forgotten. In this dish, it is the star front and center.

Sometimes there is just no time to make an elaborate dinner and what you need is a quick, hearty salad. And in my case, I’m not always in the mood to cook a meat. Either I don’t have any in my fridge or I just don’t want the mess. etc, etc, etc.

— Let me tell you about this fabulous and easy vegetarian salad topped with a fabulous hasselback sweet potato that comes together in less than 45 min!

But what about the protein you ask?

That is a reason why this salad is so great! The protein is in the edamame!

Look at that?! Edamame is chock full of protein! And what’s not showing is the 8 whopping grams of fiber!! That’s an incredible amount of fiber in one ingredient.

And that is what makes this salad special, it’s got the vegetables AND the protein!

Still not sold? Add a hasselback roasted sweet potato on the top and you’ve got more high quality fiber and your healthy carbs covered!

The next best part about this salad is it is an ‘open and dump’ kinda salad. The kind when you open a package, chop a vegetable or two and toss them all together! The only thing that needs cooking is the sweet potato. Once that is done, the rest is thrown together!

INGREDIENTS

  • Mixed greens
    • gotta get your different types of lettuce that are rich in vitamin A, vitamin C and k! It’s also a great substitution for rice.
  • Edamame
    • With 18 grams of protein per cup, this makes the protein that packs the punch. This is the open and dump part of your salad. Grab a bag of frozen edamame, or already cooked in the fridgerated section, take them out of your freezer and DUMP them into the salad!
  • Hasselback sweet potato
    • Either cooked in the instapot/air fryer/reg oven, this extra on the salad really takes it to the nest level.
  • Cherry tomatoes/heirloom tomatoes
    • gives the colorful punch as well as the nice texture!
  • Cucumber
    • you wouldn’t have a greek salad without a juicy cucumber. Plus, cucumbers are a great source of vit k! A vitamin that helps against bone deterioation.
  • Avocado
    • the ingredient that provides a healthy dose of monounsaturated fats in the form of Omega-3 fatty acids in which have anti-inflammatory effects
  • Olives
    • yet again, would not be in the ‘greek salad’ category if there were no olives. Get the red pepper stuffed ones or the pitted kalamata variety for the best outcome:)
  • Feta cheese
    • the bite and perfect crumble of the feta cheese is irreplaceable!
  • Red Wine Vinegar/olive oil
    • for the dressing:)
  • Fresh basil
    • fresh herbs.

ASSEMBLY:

  1. Before you can start the assembly, you have to bake the sweet potato…Whether you like it in the instapot, the air fryer or the oven, it is pretty straightforward! For the instapot, depending on it’s size, it cooks anywhere between 7-10 min. Err on the low side…if not your potato will be soggy.

– the most time consuming method is obviously the oven. This will take about 45 min. [again, depending on the size.]

2. Chop the cucumber + tomato + avocado. Mix together gently.

3. Add the edamame and toss.

4. Mix the red wine vinegar + olive oil + salt and pepper.

Ingredients

DRESSING:

  • 1/4 cup red wine vinegar
  • 2 Tablespoons extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper

SALAD:

  • 6 cups mixed greens
  • 2 cups frozen, shelled edamame [thawed]
  • 1 cup halved cherry/grape tomatoes
  • 1/2 cucumber [sliced]
  • 1/2 cup crumbled feta cheese
  • 14 cup fresh basil [chopped]
  • 1/4 cup kalamata olives [sliced]
  • 1/4 cup green onion  [chopped]
  • Hassle-back sweet potato

Instructions

  1. Cook your sweet potato with the method of your choice. DO THIS FIRST so it will be ready when everything else is ready! 

DRESSING:

Mix the red wine vinegar + olive oil + salt + pepper. Set aside.

SALAD:

Add all the remaining Ingreedients in a bowl and toss. 

Arrange sweet potato on top.
