This healthy vegetarian Greek salad is topped with a beautiful Hasselback sweet potato surrounded by edamame, tomatoes and everything else that makes a Greek salad wonderful!

Ingredients

DRESSING:

  • 1/4 cup red wine vinegar
  • 2 Tablespoons extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp ground pepper

SALAD:

  • 6 cups mixed greens
  • 2 cups frozen, shelled edamame [thawed]
  • 1 cup halved cherry/grape tomatoes
  • 1/2 cucumber [sliced]
  • 1/2 cup crumbled feta cheese
  • 14 cup fresh basil [chopped]
  • 1/4 cup kalamata olives [sliced]
  • 1/4 cup green onion  [chopped]
  • Hassle-back sweet potato

Instructions

  1. Cook your sweet potato with the method of your choice. DO THIS FIRST so it will be ready when everything else is ready! 

DRESSING:

Mix the red wine vinegar + olive oil + salt + pepper. Set aside.

SALAD:

Add all the remaining Ingreedients in a bowl and toss. 

Arrange sweet potato on top.
