Healthy Nutty Granola made with Coconut Oil

A healthy nutty granola with a good roast and a nice crunch that pairs well with yogurt, friends, ice cream or by the handful!

Oh granola. You are a food group all of your own. Two of my main people in my family happen to ADORE you. You can be chocolate, you could have coconut, you could be drenched over ice cream or yogurt, you can be eaten late night in the kitchen when no one is watching, you can be easily placed into a little tiny bag only to have the owner find out that the tiny bag was WAYYY too tiny, you can be inhaled via one’s palm…Whatever you are, or how you are consumed…you are delicious.  

My one issue with you, however, is you are usually stuffed full of cane sugar, have a chalky taste….and the WORST is you leave me with canker sores. So I decided to fix you and transfer you into a healthy Nutty Granola and make you with Coconut oil.

So, I did some research and bought LOTS of granola and nuts and did some mixing and baking. Some kind of Healthy Granola madd with coconut oil and not so sweet, and without that chalky taste due to the mass manufacturing.

This Healthy Nutty Granola is it! Its chalked full of nuts and seeds and whatever you may have on hand!

Healthy Nutty Granola ingredients:

Almonds

Cashews

Pecans

Walnuts

Sunflower seeds

Dried cranberries

Dried cherries

Dried fancy raisins (thank you Trader Joe’s)

Chunk or no chunk?

I also did a little experiment with the amount of coconut oil. I wanted to get a chunky granola to appease my men in my household. In the process of working it out, after I mixed all the dry ingredients-but before I added them to the boiling honey/coconut oil mixture-I divided it into two bowls.

In one bowl  I added only 1/4 cup  of coconut oil

In the other I added 1/2 cup of coconut oil.

===To my surprise, they both had the same chunky-ness! Crazy.

So, due to the fact that we could all use a little less fat in general in our lives….I opt to go with the lesser amount of oil. But, bottom line, either way, it works.

Ingredients

Scale
  • 8 cups oats
  • 1 cup ground oats
  • 1 1/2 cups wheat germ
  • 1/4 cup chia seeds
  • 1/4 cup flax seeds
  • 1 cup sunflower seeds
  • 1 cup almonds (finely chopped)
  • 1 cup pecans (finely chopped)
  • 1 cup walnuts (finely chopped)
  • 1/2 cup cashews (finely chopped)
  • 1 1/2 tsp salt
  • 1/4 cup maple syrup
  • 3/4 cup honey
  • 1/2 cup coconut oil
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla extract
  • 1 cup raisins or dried berries (optional)

Instructions

  1. preheat oven to 300, line two baking sheets with parchment paper
  2. combine all dry ingredients in bowl
  3. in another bowl combine wet ingredients (except vanilla) and bring to boil over medium heat
  4. pour wet mixture onto oat/nut mixture
  5. spread evenly onto cookie sheets and bake for 30-35 min or until golden brown, add raisins at the end.

Notes

*for chunkier granola …dont stir throughout cooking process. Let cool completely, then break gently:)
