The chocolate chip cookie made special with the addition of Caramel Baking Chips that, when made extra big, is a perfect cookie with a crunchy top and bottom and a dense, chewy middle!
There are many chocolate chip cookie recipes out there and I believe that there are many delicious chocolate chip cookies all delicious for different reasons. Whether that be…the chewiest, the crunchiest, the fluffiest, the thickest, the best frozen, the best when served hot etc.
THIS cookie however, is in a league of it’s own. It is Joanna Gaines recipe with a little twist…with the addition of Caramel Baking Chips as WELL as dark chocolate chips. The result is so good, it can be enjoyed cookie after cookie after cookie.
WHY THIS CHOCOLATE CHIP COOKIE
- THE SIZE:
This particular chocolate chip cookie I like to make EXTRA large. Using the large 1/4 cup cookie scoop.
Although it is HUGE, think of it like a cookie shop size, or a Starbucks size, or any cafe size. By making it this size, it gives the cookie the opportunity to have a crunchy thin top and bottom, yet still a chewy/dense center. It’s the perfect combination and ratio to crunchy/dense.
- THE BROWN SUGAR
This recipe ONLY uses brown sugar which is fun. I don’t have another chocolate chip cookie recipe that only uses Brown Sugar. And since brown sugar has made from white sugar + molasses. The molasses gives this cookie a nice deep/rich caramely flavor. It’s really quite lovely.
- THEY FREEZE NICELY
Although they are nice and plump when scooped, once they are baked, they flatten nicely and stay soft in the middle. Therefore it makes for a perfect frozen cookie. WHAT IS a perfect frozen cookiee you ask? Well, a perfect frozen cookie has a chewy center and is rather flat so one doesn’t break their teeth when trying to bite it out of the freezer.
It’s these 4 particular traits that make this just an all around good chocolate chip cookie with Caramel Baking chips and brown sugar.
INGREDIENTS:
- All purpose flour
- Butter—be sure you use UNSALTED or these will be too salty.
- Brown sugar [NO white sugar! Which is definitely an attribute that makes these special]
- Vanilla
- Dark Chocolate Chips
- Trader Joe’s seasonal Caramel Sea Salt Chips.
- Baking Soda
- Salt
- Eggs

Ingredients
- 2 1/2 cups all purpose flour
- 1 heaping teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup unsalted butter, [at room temp.]
- 2 cups packed brown sugar
- 2 large eggs [at room temp]
- 1 1/2 tsp vanilla extract
- 3/4 cup semisweet chocolate chips
- 3/4 cup Caramel Baking Chips
Instructions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Cream butter and sugar with paddle attachment until light and fluffy, approx 2-3 min.
Add eggs and beat until combined.
Add vanilla and mix to combine.
Add dry ingredients…flour + baking soda + salt.
Mix in chocolate chips/caramel chips.
Drop the dough by 1/4 cup cookie dough spoonfuls onto the baking sheet. Bake for 10-12 min or until sides are golden brown. **
Notes
**Make sure you cook until the sides and tops begin to turn golden brown. The center will still be chewy I promise.
