Ingredients

3/4 package of chopped kale salad
1 avocado, diced
1/2 package of TJ’s Unexpected Cheddar Cheese, chopped
3 hard boiled eggs, chopped
1 stalk celery, chopped
1, 15 ounce can of chickpeas
Green Goddess Dressing TJ’s (or dressing of your choice)
Rotisserie chicken, optional
Instructions
Preheat oven to 400 degrees.
Rinse and drain chickpeas. Spread out on parchment paper lined pan and spray with olive oil spray. Sprinkle with salt and pepper.
Roast chickpeas for 20 ish min or until crispy.
Mix crispy chickpeas together with all other salad ingredients.
If using homemade lemon dressing= Mix lemon juice + olive oil + garlic. Drizzle over the top.
