This fresh summer salsa combines frozen corn, mango, avocado, black beans, diced tomatoes and cilantro to be dipped and scooped by any chips at your fingertips.
I grew up going to a big, fun, extended family reunion every two years- switching off between Arizona and Utah. It was a family of laughter and joking and pranking and stories. And among all the other great qualities, there was a distant cousin named Luwana. She fit all of the characteristics above INCLUDING making this delicious salsa!
Thus, it has been a Pickup family favorite in the summer month’s of July, August and September.
INGREDIENTS:
- Frozen corn
- I’ve also used fresh corn…which works equally well.
- Frozen corn is just the easier route:)
- Avocado
- Don’t go light on the avocado
- Black beans
- come from a can…rinse and then dump in
- Cherry tomatoes
- I prefer cherry tomatoes because they have less water and tend to be more firm
- Cilantro
- Fresh, obviously:)

- Green onion
- Jalapeno (Optional)
- depending on my target audience is how I decide if I add the sliver of heat or not.
- Lime Juice
- fresh works best
- TJ’s Chili Lime seasoning
- Can substitute with 1/2 tsp chili powder + 1/2 tsp salt
- Olive oil
Luwana’s Corn Avocado Salsa {with mango}
Perfect for any summer gathering and comes together in minutes! All you need is frozen corn, fresh tomatoes, black beans, avocado, mango and cilantro (and jalapeño if you desire) tossed with olive oil and a splash of honey!

- 1 1/2 cups frozen corn
- 1 1/2 cups cherry tomatoes (diced)
- 1 large ripe avocado (diced)
- 1, 15 ounce can black beans (drained)
- 1 mango (diced)
- 2 green onions (diced)
- 1/4 cup lime juice (approx 2 limes)
- 1/3 cup fresh cilantro (chopped)
- 1/2 tsp TJ’s chili Lime seasoning *
- 1/2 tsp salt
- 1 tsp jalapeno (chopped and deseeded) *optional
- 2 Tbsp olive oil
- 2 tsp honey
- Chips for dipping
Instructions
- Add all ingredients to a large bowl and mix.
- Best if left to sit for a few hours…the flavors just marinate beautifully!
Notes
*Subsitute 1/4 tsp chili powder or chili pepper + 1/4 tsp salt.
