One Pan Sweet Potato Turkey Dinner

This quick and easy one pan dinner includes everything needed for a nutritious meal–the sweet potato, lean turkey, spinach, beets, fresh basil and Parmesan cheese.

Ingredients

Scale
  • 1 lb 99% lean ground turkey
  • 1 large sweet potato, diced
  • 2 beets, diced
  • 1 medium onion, diced
  • handful of spinach, chopped
  • 2 Tablespoons fresh basil, chopped and divided
  • salt and pepper to taste
  • 1 tsp garlic, minced

Instructions

  1. Saute onion with olive oil and garlic until onion is translucent, approx 3-4 min.
  2. Add ground turkey, breaking it up as it cooks. Season generously with salt and pepper and 1/2 of fresh basil. Cover and saute over medium heat approx 5-7 min or until slightly pink.  [Do not cook all the way through…it will continue to cook with the other veggies.]
  3. Add sweet potato and beets, cover and continue sauteing until root veggies are soft to a fork and turkey is no longer pink. Preheat oven to 400 degrees. *
  4. Once turkey and veggies are cooked, take off of heat and add chopped spinach and fresh grated parmesan cheese. 
  5. Place saute pan in oven to melt the cheese. Watch carefully!
  6. Remove from oven and top with fresh basil.

Notes

*If the pan looks dry, add about a 1/2 an inch of water to the bottom and cover.
