Spring Sunshine Carrots [with vinegar/honey sauce]

These Spring Sunshine Carrots are made with Apple Cider Vinegar + honey + raisins and those delectable slender carrots.

Spring is upon us…finally! And with that come the Easter season and bunnies and carrots…because bunnies eat carrots. ha! This recipe is just your ticket to one of the most unique and zesty carrot dishes with Apple Cider Vinegar + honey + raisins + orange zest all drizzled over the perfectly slenderized carrots.


I found some very interesting facts when I googled it….
HEALTH: 

A medium-size carrot has 25 calories, 6 grams of carbs, and 2 grams of fiber.

HISTORY: 

The carrot was originally yellow, white or purple. But in the 17th century, most of those crunchy vegetables turned orange. Why you may ask? Dutch growers cultivated orange carrots as a tribute to WILLIAM OF ORANGE—A guy who led the struggle for Dutch independence…and the orange color stuck.

There you have it….thousands of years of yellow + white + purple carrot history wiped out in a generation.

INTERESTING: 

How many carrots do you have to eat to literally turn orange?? 10 medium sized carrots for a few weeks. So, if you’re looking for a more natural looking orange tan that doesn’t smell like the tanning salon…eat more carrots!

About this recipe–

Since living with my mom, I have been really trying to hone in on her cooking/baking skills and history. She has so many recipes in her head from when she was little that her mom would make.

This carrot recipe is a variation of one of them! It is very unique combination of vinegar +honey + raisins + orange juice.

INGREDIENTS
  • Vinegar
  • Honey
  • Raisins
  • strips of orange zest
  • slender carrots
the METHOD

CARROTS

#1: Roast as you would most vegetables. Clean and trim off ends as needed

SAUCE

#1: Combine all of the ingredients in a small saucepan and bring to a boil.

#2: Reduce to heat and simmer until the sauce has reduced and is more syrupy…about 15-20 min.

the DELIVERY:

#1: Drizzle the saucy sauce on the top of the carrots [without the orange strips] and then place back in oven for a few min to further caramelize:) Yum!

Ingredients

Scale
  • 1  1/2 pounds slender carrots [scrubbed and trimmed]
  • 1 Tablespoon extra-virgin olive oil
  • 1/4 tsp ground pepper
  • 1/4 tsp salt
  • 1 cup Apple Cider Vinegar 
  • 1/4 cup honey
  • finely chopped fresh parsley for garnish [optional]
  • 1/4 cup raisins
  • Orange zest stripes [a few 1 in strips]

Instructions

CARROTS

  1. Preheat oven to 375.
  2. Wash carrots and trim off leafy stems. You may need to slice in half depending on the size of the carrots.
  3. Place single layer on a prepared baking sheet and spray or drizzel olive oil and season with 1/4 tsp salt and 1/8 tsp pepper.
  4. Roast carrots for 35-40 ish min or until tender

 

SAUCE:

  1. While the carrots are roasting, combine vinegar + honey + raisins + orange zest in a small saucepan. Bring to simmer over medium heat. Keep simmering util sauce is thickened and syrupy about 20 min. 
  2. Discard zest and drizzle over roasted carrots. Return to oven and roast for an additional 5 min to further caramelize sauce. 
  3. Garnish with parsley and enjoy!

Notes

*keep simmering the sauce until it reduces to syrupy texture. 

** I doubled it when making it for a group of 8 adults.
