- Or almond butter…unsalted or salted works. If you use unsalted consider sprinkling salt in the batter.

- can also use white granulated sugar
- NOTE: honey does NOT work…too much liquid…I tried it)

- 1 cup homemade peanut butter (can use almond butter)
- 3/4 cup coconut sugar (can use granulated sugar)
- 1 egg
- 1 tsp vanilla
- chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients together.
- Cookie scoop cookies onto prepared cookie sheet, indent with fork.
- Bake for 8 min.
