This healthy Coconut Pecan Granola is made with simple ingredients and sweetened with Maple Syrup. All in all, its baked to perfection and ready in 30 min!

Ingredients

2 cups oatmeal
1 cup cracked oats
1/2 cup unsweetened coconut
1/2 tsp salt
2 tsp cinnamon
1 tsp vanilla extract
1/2 cup chopped pecans
1/4 cup chopped almonds
1/4 cup coconut oil
Instructions
Preheat oven to 350 degrees.
Mix all dry ingredients in a large bowl.
In another smaller bowl, mix wet ingredients.
Add wet to dry.
Spread onto lined jelly roll pan.
Bake for 25 min or until browned and toasted.
Let cool for chunky granola.
Notes
* I used fresh coconut, but dry, unsweetened coconut can also be used.
