This healthy Pumpkin Lassi is made with non-fat plain Greek Yogurt + pumpkin puree + unsweetened almond milk + the right spices + Fall spirit!

Ingredients

Scale
  • 1/2 cup pumpkin puree
  • 1/2 cup non-fat plain greek yogurt
  • 3/4 cup unsweetened almond milk [I use half unsweetened almond milk ice cubes and half liquid form]
  • 1 frozen banana
  • 2 tsp pumpkin pie spice
  • 1 Tablespoon maple syrup [or 3 pureed dates]
  • dash of salt
  • 1 tsp vanilla 

Instructions

  1. Mix all ingredients in your blender! * 
  2.  Top with whipped cream and a sprinkle of cinnamon.

Notes

* If using dates, blend, blend BLEND them with the banana first as they are tricky and take a while to blend into a paste. If you try and blend them with the whole lassi, then you will be left with a watery drink with maybe some date chunks.
