These delicious homemade pickles made with honey + apple cider vinegar + cucumbers + red onions + garlic are an easy and healthy replacement for the store bought version.
My mom and I visited my dear aunt Judy just a few weeks ago and I have been thinking of her ever since.
She is my mom’s older sister and has always been known to bring the best treats and side dishes to every family party. One of her famous dishes was her chocolate mousse pie. It is creamy and fluffy with a crust that is crunchy and has the perfect amount of salt.
Man, I should get that recipe.
Well, this visit at her house was no different. As soon as we walked in, she insisted on sharing with us her latest and greatest that was in the fridge.
Unbenounced to us, it wasn’t a chocolate pie or a dark chocolate brownie…it was a jar of pickled red onions and pickled cucumbers! [right along side a slice of homemade cinnamon roll cake of course].
OF COURSE! Tis the season for pickling! Surely she has been pickling…the baker/chef of all was pickling in the right season. No shocker.
The little morsels were crunchy and tangy and had the perfect amount of garlic. Just enough to tingle your noise when you bit into it.
And lucky for me—she shared her recipe! The best kind…a family recipe:)
This recipe is a PICKLING recipe via Vinegar…because it is a strong acid; few bacteria can survive. Preserving the cucumbers!
NOT to be confused with FERMENTING. Which is a totally different process. 🙂

Perfectly pickled cucumbers and red onions…sweetened only with honey and spiced with apple cider vinegar and garlic.

Ingredients
1 medium cucumber
1 red onion
1 cup apple cider vinegar *
1 cup water
2–3 Tablespoons honey
1 Tablespoon salt
1 garlic clove
1 Tablespoon dried dill [optional]
2 tsp mustard seeds
Empty glass jar
Instructions
1. Cut cucumber into 1/4 in thick slices, slice red onion into 1/4 in half circles. Pack into jar, leaving 1/4 in at the top.
2. In medium saucepan, bring to boil mustard seeds + garlic + apple cider vinegar + water + honey + salt. Bring to boil to dissolve salt and honey.
3. Pour liquid over vegetables in the jar. Cover tightly with lid and place in fridge or leave on counter.
Notes
* Can use white vinegar in place of apple cider vinegar.
* I have also used dijon mustard when I don’t have mustard seeds.
