Perfectly pickled cucumbers and red onions…sweetened only with honey and spiced with apple cider vinegar and garlic.

Ingredients

Scale

1 medium cucumber

1 red onion

1 cup apple cider vinegar *

1 cup water

23 Tablespoons honey

1 Tablespoon salt 

1 garlic clove

1 Tablespoon dried dill [optional]

2 tsp mustard seeds

Empty glass jar

Instructions

1. Cut cucumber into 1/4 in thick slices, slice red onion into 1/4 in half circles. Pack into jar, leaving 1/4 in at the top. 

2. In medium saucepan, bring to boil mustard seeds + garlic + apple cider vinegar + water + honey + salt. Bring to boil to dissolve salt and honey. 

3. Pour liquid over vegetables in the jar. Cover tightly with lid and place in fridge or leave on counter. 

Notes

* Can use white vinegar in place of apple cider vinegar. 

* I have also used dijon mustard when I don’t have mustard seeds.
