Cooking beets no longer has to be back breaking, soil digging work. It is as easy as boiling until they are soft and the skin just melts off!
Talk to me about your issues of cooking a beet. Is it they are too hard and you don’t want to knick your knuckles trying to peel them? Or you don’t know how to cook them? Or is it because you think they taste like the dirt they are covered in? Well…
I could preach the beauty of the beet ALL. DAY . LONG. But i’ll let you decide. I mean, if you like them you already know how sweet and delicious they are. AND if you are in the category of thinking they taste like DIRT…well then close your eyes and TRY them again and you may be pleasantly surprised.
Not only are they naturally sweet, but they also pack a punch in the vitamins and antioxidant category.
A few cool benefits of the beet…
It contains BETAIN, the compound that gives the beet the rich purple color!
Research has found that betain has powerful antioxidant and anti-inflammatory effects. It is essential for many cell functions and also protects cells against fatigue and provides endurance during recovery.
the beet contains NITRATES
“And the nitrates in beets help expand blood vessels,” says Lisa Sasson, R.D., clinical professor of nutrition at New York University. “Studies have shown that after eating foods that contain nitrates (such as beets), there is increased blood flow to the brain.”
beets contain GOOD sugar
Although its true that beets contain about 8 grams per 2 beets…that still beets eating 8 grams from a bite of a cookie. The fiber content in beets is high enough to slow the absorption of the sugar into the bloodstream. Which is good.
“The glycemic load for a cup of beets is 8.3, and anything under 10 is considered low,”
As the name of my blog indicates…I really like beets. So, if you need some help with a recipe, you might like these!
