This beautiful and healthy Watermelon cake is made with only watermelon and light mascarpone whipped cream. The perfect summer dessert.

Sometimes your eyes want a cake but your figure doesn’t:) you know what I mean? Or maybe you are trying to make a unique dessert? Well, this is a beautiful cake fit for a party or backyard BBQ but It’s made from a fruit! A watermelon!

I can’t tell you how to choose a watermelon. That is up to you–and may you choose a good one! BUT it is my personal opinion and that of others that I have polled…that even if your watermelon is less than ideal… If you make it cold…and then add some delicious whipping cream?? you’ve got yourself some tasty watermelon; despite its dreary lack of taste.
INGREDIENTS: (simple)
- watermelon
- mascarpone cheese
- whipping cream
- powdered sugar* (optional)
- vanilla extract
STEPS for the WATERMELON part of the cake:


- DON’T cut the watermelon in half. Cut the watermelon so one half is larger than the other. Then you have plenty of room to carve it down so you have a clear cylindrical cake shape:)
- Shave off little bits of the rind at a time…once you cut it’s cut!
- Don’t forget to place the watermelon cake in the fridge once it is cut, prior to frosting it.
STEPS for the MASCARPONE WHIPPING CREAM:
- Make the whipped mascarpone cream cheese while the cake is in the fridge.
- Whip the whipping cream until soft peaks form, adding vanilla and the dash of powdered sugar.
- Fold in ROOM TEMP mascarpone cheese. Do not whip too heavy handedly:)
- Dollop a lot of whipping cream on the cold cake and spread around. Sprinkle with blueberries if desired and serve immediately.


Watermelon Cake with Mascarpone Whipping Cream
This refreshing and HEALTHY cake is beautifully made with watermelon and frosted with a light and fluffy mascarpone whipped cream.
Ingredients
- Watermelon
- 1/2 cup Mascarpone cheese
- Whipping Cream
- Dash of powdered sugar
- Vanilla extract
Instructions
- Cut watermelon down to the desired cake shape. (Cut watermelon with one side is larger than the other so there is plenty of shaving down wiggle room).
- Place shaped cylindrical watermelon cake in the refrigerator while you make the whipping cream/mascarpone cheese frosting.
- Whip the whipping cream together until soft peaks form, adding vanilla and the dash of powdered sugar.
- Fold in ROOM TEMP Mascarpone cheese until smooth.
- Remove watermelon cake from fridge and frost with the whipping cream. Serve immediately!
