Watermelon Cake with Mascarpone Whipping Cream

This refreshing and HEALTHY cake is beautifully made with watermelon and frosted with a light and fluffy mascarpone whipped cream.

Ingredients

Scale
  • Watermelon
  • 1/2 cup Mascarpone cheese
  • Whipping Cream
  • Dash of powdered sugar
  • Vanilla extract 

Instructions

  1. Cut watermelon down to the desired cake shape. (Cut watermelon with one side is larger than the other so there is plenty of shaving down wiggle room). 
  2. Place shaped cylindrical watermelon cake in the refrigerator while you make the whipping cream/mascarpone cheese frosting.
  3. Whip the whipping cream together until soft peaks form, adding vanilla and the dash of powdered sugar.
  4. Fold in ROOM TEMP Mascarpone cheese until smooth.
  5. Remove watermelon cake from fridge and frost with the whipping cream. Serve immediately!
