FRENCH TOAST CASSEROLE

  • 1.5 to 2 loaves of bread (depending on the size of your bread…)
  • 5 eggs *
  • 3 cups milk **
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 Tablespoon vanilla
  • 1/3 cup sugar

 

GRANOLA TOPPING- (mix in gallon ziploc bag)

  • 2/3 cup brown sugar
  • 1/2 cup butter ***
  • 1 tbsp flour
  • 1 cup oats
  • 2 tsp cinnamon

Instructions

  1. Cut crusts off of bread, slice in 1 in slices
  2. Chop apples (if using), set aside
  3. Grease 9X 13 in pan. Layer bread evenly (or toss) into prepared pan, layer in apple pieces if using
  4. Mix all FRENCH TOAST CASSEROLE ingredients (except bread) into bowl
  5. Pour egg mixture evenly over bread, cover and place in fridge overnight
  6. Mix granola ingredients in ziploc bag. Place in fridge with casserole

NEXT DAY-

  1. Preheat oven to 375
  2. Sprinkle granola over casserole and place in oven for 35-45 min.
  3. Check the “doneness” by pulling out of the oven and scooping some casserole out or sticking a spoon in. It is DONE if the bread is spongey but NOT runny. If using glass dish, check doneness by bubbling on the side of the dish. You can tell if the liquid is absorbed. DO NOT OVERBAKE.
  4. Let cool for about 15 min until dishing out. It needs this time to set up.
  5. Garnish with fresh fruit of some kind.
